Che Fare con Le Foglie di Sedano

RICETTA PESTO CON LE FOGLIE DI SEDANO –

Ottimo per condire la pasta o per farcire crostini. Da provare in abbinamento con del pesce cotto al vapore. Più facile di così!

INGREDIENTI (per 4 persone)

  • 100 gr di foglie di sedano
  • 50 gr di mandorle sgusciate
  • 50 gr di parmigiano
  • un pizzico di sale grosso
  • una spruzzata di succo di limone
  • olio evo q.b.

PREPARAZIONE

Inserire tutti gli ingredienti nel mixer e tritare fino ad ottenere un composto cremoso.

RICETTA FRITTELLE CON LE FOGLIE DI SEDANO –

Squisite come antipasto o secondo piatto: una tira l’altra.

INGREDIENTI (per 4 persone)

  • 100 gr di foglie di sedano
  • 5 cucchiai di farina
  • acqua necessaria per ottenere una pastella densa ma piuttosto liquida
  • 1 cucchiaino di sale
  • 3 cucchiai di parmigiano
  • 2 cucchiai di pecorino
  • 1 uovo
  • olio di semi per friggere

PREPARAZIONE

  • Mondare le foglie di sedano e sminuzzarle con le forbici o con un coltello in modo grossolano
  • Preparate a parte la pastella con la farina, l’acqua, i formaggi (se preferite i sapori più delicati usate soltanto il parmigiano, 5 cucchiai in tutto), l’uovo e il sale
  • Unite, in ultimo, le foglie di sedano
  • Ricordatevi che per una perfetta riuscite le foglie di sedano dovranno prevalere in quantità rispetto alla pastella, che deve servire più che altro da “collante”
  • Friggete le frittelle (createle prendendo il composto a cucchiaiate) in olio di semi bollente
